2nd's please!

At the end of June my husband I decided to throw a 4th of July cookout. I thought I'd just get some burgers and dogs, toss them on the grill, make some potato salad, veggies & dip, garden salad, chips & dip, and a trifle for dessert. No problem, I'd just make sure I had plenty of everything for about 10 guests - my friends and my husband's co-workers.

So I planned and went to BJ's and got items in bulk and did the prep work myself to save money; every thing was all set to go. I had prepped all the veggies and cooked the potatoes (for the potato salad) the day before. That morning all I had to do was a little cleaning, put the 2 salads together and make the trifle. And with no help from my husband because he was at work till 6pm - an hour after we told the guest to start arriving.

Everything was going smooth, to my amazement, because something always goes wrong when planning a party. Cass came by a little early so we could catch up and she helped me set up a little seating arrangement with red,white, and blue lights in the backyard.

It was fast approaching when guests should be arriving and Cass and I were inside watching The Next Food Network Star. It was becoming 5:30 and still no guests, but Cass and I were happy watching TV and eating the appetizers. 6pm came and my husband got home and we still had no guests. Then the hubby went to pick up a guest who's only transportation is bike; when they got back he decided to cook some burgers and dogs because it looked like all 2 guests had arrived. While he was doing that I was putting out the salads and condiments.

We ate outside, then decided to come back in cause the bugs came out and the 4 of us decided we wanted dessert. I did a little quick cleaning up from dinner and put all the extra food away and then got out the trifle. It was a red, white and blueberry trifle. We all had one serving and devoured it. Then we all went back and had seconds and again devoured our plates. My husband may have even had thirds because he knew I wouldn't let him have any the next day because he is diabetic (yes, I know he shouldn't have had any, but I was being nice).

So after everyone inhaled the trifle and was full, my hubby's co-worker decided to bike home before it was too late and Cass thought she should be getting home.

My husband and I then talked about that we had so much food left over and would be eating it for the next week, except the trifle. I put the one last serving of the trifle in a container and put it in the fridge. I decided all the dishes would still be in the sink in the morning and went to bed.

And I just have to add: this trifle is the impetus behind this site! I was bugging her for the recipe because it was so nummy, and we came up with the idea to do the blog.
